So - chicken and beer - what could go wrong? :)
I marinated the chicken strips in a bowl and added the dark beer, sliced garlic, oil, chilli peppers spice, the origano and some salt, and left it to an overnight rest in the fridge.
The next morning I shook off the excess liquid and cooked them over high heat in a pan with a splash of oil.
Now here comes the twist in the recipe.
The original one asks for avocado, and since the damn thing is so expensive in my poor little country, I decided to fill-in some green peppers and zucchini squash.
It's macedonian flavour all the way ! :)
I grilled them in the oven, for about 20-25 minutes at 200 C.
I mashed the grilled peppers and the zucchini, added crushed clove of garlic, lemon juice and seasoned with salt and black pepper.
The tortillas were allready bought and ready
so I've spread the peppers-zucchini mash on them and top with chicken strips.
I've decorated with season salad - fresh tomatoes, onions, cucumbers, carrots and some parsley.
A few useful tips:
Do not worry if you cook the chicken on a high temperature. The meat will not dry out, because it's been marinated in the fridge all night long. The goal is to get them browned nicely and caramelized, as in the recipe.
Don't be afraid to use chilli pepper spice. I know it's very spicy, but when it's mixtured with the dark beer, it gives kinda sweet and caramelized flavour.
The goal is to mix two very different flavors: the sweet chicken meat and the sourly mash of the vegetables with the lemon juice.
This combined makes an explosion of a great taste!
